Happy Monday!! It’s a beautiful day, do you know why? It’s because this is the day the LORD has made! I’ve been working on really trying to see the positive in everything, the beauty in all of life’s moments- even the seemingly mundane parts of life. Let me tell you that when I really look, there is joy to be had in every situation! There is beauty in everything, as long as I’m truly wanting to see it. God is showing me that I have a reason to be thankful in ALL things.
I’m sure many of you are the same way, always looking to see the beauty in everything. But if that’s a struggle for you (like it can be for me), I challenge you to start looking for the beauty and joy. You will certainly find it! And sometimes it’s in the least suspecting places. It’s like a treasure hunt all day long with you and God. It’s fun!

Every Sunday, my family has a tradition of getting together for dinner and spending time together. My sister Julie hosted last night, and she made a delicious dinner for us! It was a recipe she found on Pinterest (SUCH a fun site with amazing ideas… I just love browsing pinterest and pinning so many things that I guess if I’m being honest I most likely won’t ever try… but STILL fun to dream and plan! :)). Anyways, it’s for White Chicken Enchiladas from Joyful Momma’s Kitchen.
Verdict? They were AWESOME!!! We ate them with black beans and chips and salsa… it was a meal fit for kings. So this was a pinterest success, and I would recommend anyone bringing these enchiladas over to a friend. Plus they will freeze well, too! Thank you, Julie for the awesome dinner last night!
Hello everyone! Happy Monday! I have a wonderful meal idea for you that would be a beautiful meal to bring someone this week. It’s paleo as well as gluten free (so it’s great for those with food allergies, etc), and super healthy and delicious…. Thai Chicken Lettuce Cups from Paleo Girl’s Kitchen.
This is going to be a new favorite recipe idea site for me, I can tell! I’m ready for my family and I to really start eating healthier… hence the paleo and gluten free meal idea! 🙂
My sister in law is amazingly fit and super healthy, and she is a trainer full time at a cross fit gym in Colorado. She has eaten Paleo for some time now, and swears by it. She says it has helped her feel so much better in so many ways. Now it’s a lifestyle for her, and she enjoys it so much! I have to say I’m intrigued for sure, and am heavily considering trying this out. Clean eating can’t hurt anything… it can only help!

I met up with my sisters and mom last night for dinner and a movie (a tradition we have- just us girls to celebrate our birthdays each year), and we ate at a restaurant called Pita Jungle. I love that place, and I had the coconut curry soup… hence, why I was super excited to see this recipe today! The soup was amazing, and I know this Coconut Curry Chicken will be too.
Plus, how nice is using the slow cooker??! I love putting all the ingredients in there, turning it on, and going about my day knowing that dinner is being prepared for me without me doing anything to it. ENJOY and share this meal with a friend this week!!

I checked out this website because I got a Food Tidings invite for a friend I went to school with, and her family eats gluten free. Her name is Jamie, and she and her family (husband, daughter, and son) just adopted a SWEET little girl from India. It was quite a process, but SO worthwhile! They have the most amazing story, and you’ve just GOT to check out her blog called A Worthy Journey because she has taken her readers along with her on this journey of adoption, as well as their journey with food allergies and spina bifida (both her daughter and her adopted daughter have spina bifida- I’m telling you, this family is AMAZING!) It’s a wonderful blog, and Jamie has the most beautiful heart and it shines through in her writing!

Happy Monday, everyone! It’s a beautiful day here in Arizona, and I hope you’re all ready for the start of a wonderful week. I have a delicious meal idea for Jenna’s Chicken Tortilla Soup from an amazing slow cooker resource called The Crockin’ Girls. Jenna is one of the co-founders of the website, so we know this recipe must be a winner! This recipe site is FILLED with amazing slow cooker recipes, so for sure check it out! You gotta love the slow cooker… being able to basically put all the ingredients in one pot, set it, and know that an awesome meal is being made for you as you go about your day. I know I LOVE that because I’m all about making things as simple as possible.
This recipe would be a great one to bring someone this week. Soup is a great meal to bring during this chilly season. It warms the body and the heart as well… at least that’s what soup does for me! Have a great week!!!
Hi there everyone! I want to start off by apologizing for the inconvenience we’ve caused you this past weekend with having our site be so spotty. It was either SUPER slow or timing out for so many of you, and we are so sorry about that. There’s nothing worse than trying to send out a schedule that needs to be filled up, and not being able to get to it. We have used it many times for our own family and friends, and we totally get it. It’s very important that it works quickly and effortlessly without a doubt. Especially since many of the meal schedules you’re creating are for a difficult and important time in people’s lives. Because of this, It is important that our site run fast and be an effective tool in allowing you to help others by bringing them meals. We want to help make things easier for you, not harder!
We appreciate all of you more than you know. Thank you so much for your patience this past weekend. We found the problem, and we’re currently in the process of migrating our hosting with our current host to keep this from happening again. Hopefully I used the correct technical terms but you can never be sure because I’m by no means a tech savvy person (which is why I’m Customer Relations, and not on our IT team!:)) So rest assured, this is being taken care of, and we don’t want this to happen again just as much as you don’t. This reminds me of when I was a kid, and occasionally got to go to Sizzler with my parents. There was something they had called malibu chicken that reminded me of this casserole. Man, it was SO good! So I’m very sure this casserole is delicious, and I can’t wait to try it out!

Hi there! I wanted to start this post out by extending a huge amount of gratitude to all of our Veterans as well as active Military for all that you have done and continue to do to protect our freedom here in the USA. We appreciate you!!
This morning my family and I went to a Veteran’s Day Parade in Central Phoenix. We met up with our friends, and they had their grandparents there. The grandfather is 94 years old, and is a Vietnam Veteran. I have to say that it was one of the most beautiful things I have seen in a long time, watching people from the parade (Military and civilians) shake his hand and thank him for all that he has done for our country. He was honored, proud, and I just saw happiness and contentment in his eyes as he shook so many thankful hands. My friend said this was the highlight of his and his wife’s year. I believe it! The parade was wonderful, and I was so grateful that we can share with our kids the meaning of Veteran’s Day, and why we honor those who have served and are serving our country in this way. 🙂

Hi there, everyone! I hope all is well with everyone! We’ve had a great last few weeks. My husband Zach’s mom and sister came into town for a long weekend, and we had a great time with them. We BBQ’d with family, went and saw Hotel Transylvania (cute movie!), went to church together, and just had fun together.
Our third born who is now 4, started T-ball last week. He had his first game on Saturday, and it was AWESOME! What’s more is that he gets to be on the same team as his cousin, which is so fun for them! I always dreamed of when my kids would start trying out sports, and wondered which ones would “stick”. So this is so much fun for us! It’s so cute watching those 3 and 4 year olds learn to play ball too. All the dads are out there with their sons, helping them and teaching them along the way. It was seriously precious!
So that’s some of what we’ve been up to lately. 🙂

The recipe is Low Fat Baked Ziti With Spinach (which freezes well also), and it’s from the site Skinny Taste. It’s a site dedicated to a LOT of great, low fat recipes that are tried and true by the author. So this is an amazing find!!
