Hi there, friends! I have a delicious meal idea for you today that comes from What’s Cookin Chicago (a GREAT recipe resource.) It’s Chesapeake Bay Salmon, and all I have to say is YUMMY!

Salmon is so delicious, and I have to be honest with you that I rarely make it. So finding this beautiful recipe was motivating for me. I’m ready to bring salmon to my dinner table, as well as to a friend’s doorstep. Are you?

It’s Monday! I know I say this a lot, but how is it that Monday seems to creep up on me like this? Time flies when you’re having fun I guess! 😉

I have a wonderfully delicious meal idea for you today that I discovered on the amazing site Gluten Free Goddess. This recipe site has all things gluten free, and it is a GREAT go to site! The recipe I found is for Easy Agave and Lime Salmon. This would be perfect to bring someone this week… so get the ingredients and get cookin!

How was everyone’s weekend? I’ve been working hard with my youngest sister, Sarah, to put on a beautiful baby shower for our other sister, Julie. She’s having her first baby, and it’s a girl! We had the shower Saturday, and it turned out GREAT! Here’s a cute picture of my sweet daughter and I at the shower. 🙂

Today’s meal idea is for Tropical Fish Tacos with Pineapple Salsa from a fantastic recipe site, Perry’s Plate. And, super exciting news about the author, Natalie… she just had a new baby girl! What a little sweetheart she is! Congratulations, Natalie!!

Meal Idea Monday: Introducing What’s Cookin, Chicago? and TONS of freezer meal ideas!

Good morning, my Food Tidings friends! It’s a beautiful Monday, and I have a great new resource for you!

I was at a dear friends’ house the other day, and in her fridge I noticed a large ziploc bag with a few chicken breasts, and a smaller ziploc inside the larger one with some kind of marinade in it. There were directions on the bag as far as how to add the marinade and cook the chicken. It was AWESOME, and it just reinforced the idea that freezer meals are such a fantastic idea!

I saw that as a wonderful idea for bringing a meal to someone. Sometimes people end up getting too much food brought to them, and I know they don’t want any of it going to waste. So how great would it be to bring a meal like the one I saw, in a ziploc bag with directions on it, and it could be used either that day, or frozen for when they’re ready for it?!

So with that in mind, here is a great resource for you guys. It’s a link I found on one of my favorite sites, Pinterest. You just gotta love pinterest! This link that I had pinned comes from a really wonderful blog called What’s Cookin, Chicago?, and it has a whole bunch of freezer meal ideas. What a great “go to” link when trying to find that perfect meal to bring someone!

Meal Idea Monday: Herb-Butter Penne With Salmon

I plan to make this recipe this week, and it just sounds delicious! I was searching one of my new favorite recipe sites, Our Best Bites, and came across this recipe for herb-butter penne with salmon. Here’s the best part: it’s fast and easy to make! I’m all about fast, easy, and delicious. Hope you’re having a great Monday so far!!!

Quick and Easy Herb-Butter Penne with Salmon
Recipe by Our Best Bites

1 lb. salmon fillets
1/4 c. salted butter
1 clove garlic, minced
1/2 tsp. parsley
1/2 tsp. oregano
1/2 tsp. basil
8 oz. penne pasta
Preheat grill to medium or the oven to 425. If cooking in the oven, line a baking sheet with aluminum foil and spray with non-stick cooking spray. Set aside.
Bring a pot of salted water to a boil. When the water is boiling, add the pasta and cook according to package directions.
While the water is heating, rinse the salmon fillets and pat dry. Set aside.
In a small bowl, combine butter, garlic, parsley, oregano, and basil. Reserve 2 Tbsp. of the butter mixture. Spread the remaining 2 Tbsp. over the salmon. Place the salmon on the baking sheet and cook for 10-12 minutes or until the flesh is opaque and flakes easily with a fork. Remove from the oven.
When the pasta is done cooking, drain and then return to the pan. Add the reserved butter, mashed tomato, and toss to combine. Place the pasta in individual bowls and then top with a piece of salmon. Serve immediately.


Meal Idea Monday: Spiced Rubbed Salmon

Hey there everyone! How is this last week before Christmas treating you? I have to say that our family is great. My husband is a middle school teacher, and the semester just ended last Friday. So we’re all on Christmas break for the next two weeks…PARTY!

No, not really. We are going to spend the next two weeks catching up on all our home projects we’ve halfway started and couldn’t finish. I can’t imagine why we couldn’t finish them with 4 kids under the age of 6? HA! I’m sure many of you out there know exactly what I’m talking about.

We’re also going to do some wonderful and fun things together as a family and just enjoy one another. And then of course, there’s the whole reason for our break- Christmas!!!! I’m SO excited to celebrate the birth of Jesus. We have lots planned for Christmas Eve as well as Christmas Day. I’ll save that for another post because today is Meal Idea Monday. It’s not Lisa’s random thoughts Monday, right?

So I found this awesome recipe site called The Naptime Chef (cute name huh!) She has a wonderful looking recipe for Spiced Rubbed Salmon. My mouth is pretty much watering right now! Click on the link above to get the recipe.
