Happy Monday! I have a wonderful meal idea for you today, and I got it from the wonderful Six Sister’s Stuff. This website is AMAZING!!! Be prepared to have a blast searching through so many amazing recipes, as well as many great project ideas too!

Mom’s Chicken Salad Sandwiches is today’s meal idea, and boy does it look delicious! I just had chicken salad lettuce wraps this weekend, and I had forgotten how yummy chicken salad is.

Meal Idea Monday: Mexican Rice Casserole AND Carne Asada Sandwiches

Good morning, my friends!

I have¬†two awesome recipes for you all to try out this week, and you’re in¬†for a real treat!

Today’s recipes are from an amazing recipe blog I told you about a few weeks back, For The Love Of Cooking. There are SO many recipes I cannot wait to try out- I really had a hard time picking these recipes. The first one I chose is Mexican Rice Casserole. It can be made as is with ground beef, or you can make it vegetarian by omitting the beef.

The second recipe we’re featuring today is Carne Asada Sandwiches. How delicious do those sound?! I am¬†LOVING this site!

Meal Idea Monday: Pioneer Woman’s Sloppy Joes

Hey y’all! I have a delicious recipe for Sloppy Joes from The Pioneer Woman. Did you know she has her own sho on the Food Network now? How awesome is that!¬†I just think she’s amazing, and I know her show will be a huge success!

This would be a wonderful recipe to bring to someone. Enjoy! ūüôā

Ingredients

  • 2 Tablespoons Butter
  • 2-1/2 pounds Ground Beef
  • 1/2 whole Large Onion, Diced
  • 1 whole Large Green Bell Pepper, Diced
  • 5 cloves Garlic, Minced
  • 1-1/2 cup Ketchup
  • 1 cup Water
  • 2 Tablespoons Brown Sugar
  • 2 teaspoons Chili Powder (more To Taste)
  • 1 teaspoon Dry Mustard
  • 1/2 teaspoon Red Pepper Flakes (more To Taste)
  • Worcestershire Sauce, To Taste
  • 2 Tablespoons Tomato Paste (optional)
  • Tabasco Sauce (optional; To Taste)
  • Salt To Taste
  • Freshly Ground Black Pepper, To Taste
  • Kaiser Rolls
  • Butter

Preparation Instructions

Add butter to a large skillet or dutch oven over medium high heat. Add ground beef and cook until brown. Drain most of the fat and discard.

Add onions, green pepper, and garlic. Cook for a few minutes, or until vegetables begin to get soft.

Add ketchup, brown sugar, chili pepper, dry mustard, and water. Stir to combine and simmer for 15 minutes, adding salt and pepper to taste. Also add tomato paste, Worcestershire, and Tabasco if desired. Taste and adjust seasonings as needed.

Spread rolls with butter and brown on a griddle or skillet. Spoon meat mixture over the rolls, topping with a slice of cheese if it makes your skirt fly up. Serve hot with kettle cooked chips!

Meal Idea Monday: California Grilled Veggie Sandwiches

Good Morning, everyone!¬†A new Food Tidings¬†friend of¬†ours from Canada asked me last week if we could add some vegetarian recipes to our meal ideas, and I thought that was a fabulous idea. I can’t believe I haven’t thought to do that sooner. Thank you, Darlene!¬†So for our first vegetarian recipe idea, we have California Grilled Veggie Sandwiches. YUM!

California Grilled Veggie Sandwiches

Serves: 4

Ingredients:

  • 1/4 cup mayonnaise
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/8 cup olive oil
  • 1 cup sliced red bell peppers
  • 1 small zucchini, sliced
  • 1 red onion, sliced
  • 1 small yellow squash, sliced
  • 2 (4-x6-inch) focaccia bread pieces, split horizontally
  • 1/2 cup crumbled feta cheese
 

Directions

1. In a bowl, mix the mayonnaise, minced garlic, and lemon juice. Set aside in the refrigerator.

2. Preheat the grill for high heat.

3. Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill, and set aside.

4. Spread some of the mayonnaise mixture on the cut sides of the bread, and sprinkle each one with feta cheese. Place on the grill cheese side up, and cover with lid for 2 to 3 minutes. This will warm the bread, and slightly melt the cheese. Watch carefully so the bottoms don’t burn. Remove from grill, and layer with the vegetables. Enjoy as open faced grilled sandwiches.

Meal Idea Monday: Pulled Pork Sandwiches and Puppy Chow

Happy Monday, everyone!

In honor of today being¬†national “crown roast of pork day” as well as national “cereal day,” I wanted to share a recipe for both of those. I’m sure many of you think,¬†how does she even know these things? I have my sources… just kidding. I found a great website that tells me all the national food holidays. It’s awesome! I never knew there were so many days that celebrate different foods.

So here’s the recipes for this beautiful Monday: a great crock pot recipe for¬†pulled pork¬†sandwiches¬†and a dessert that is sure to keep you going back for seconds, thirds, and maybe even fourths! This would be a wonderful meal to bring to someone. Just be sure to double it, so your family can enjoy it as well!

Pulled Pork Sandwiches

Ingredients

  • 1 (2 pound) pork tenderloin (or could use shoulder or butt roast)
  • 1 (12 fluid ounce) can or bottle root beer
  • 1 (18 ounce) bottle your favorite barbecue sauce
  • 8 hamburger buns, split and lightly toasted

Directions

  1. Place the pork tenderloin in a slow cooker; pour the root beer over the meat. Cover and cook on low until well cooked and the pork shreds easily, 6 to 7 hours. Note: the actual length of time may vary according to individual slow cooker. Drain well. Stir in barbecue sauce. Serve over hamburger buns.

Puppy Chow

This recipe has a funny name, but don’t let that deceive you! It’s a DELICIOUS mixture with Chex cereal, peanut butter, chocolate, and powdered sugar… what could be better than that?!¬†I’m thinking the only thing that could be better is that it’s simple and easy to make.¬†It doesn’t last long in our house becuase it gets eaten by all! Bring this to a friend, and they’ll thank you for sure…

Ingredients:

1/2 cup peanut butter
1/4 cup butter
1 cup chocolate chips
1/2 teaspoon vanilla
9 cups Crispix cereal (any flavor)
1-1/2 cups powdered sugar

Instructions:

1. Combine peanut butter, butter and chocolate chips in a microwave safe bowl.

2. Microwave for one minute then stir to blend all ingredients thoroughly. Add 1/2 tsp. vanilla. Stir well.

3. Place the 9 cups of Crispix cereal in a very large bowl.

4. Pour the peanut butter-chocolate mixture over the cereal and toss evenly, making sure all the cereal gets a good covering.

5. Coat with powdered sugar, sprinkling evenly over the cereal and tossing as you sprinkle to cover each piece well.

Meal Idea Monday: French Dip Sandwiches and more!

I recently was introduced to a really awesome recipe blog by my beautiful sister. It’s called Our Best Bites, and she just raves about it. She has made several of the recipes, and they’ve all turned out awesome. She called me one night after she made their French Dip Sandwiches, going on and on about how great they were, and how easy it was to make them. I have the ingredients in my cupboard to make them tonight, actually!

When we had our 4th baby, who is almost 6 months old already (where does time go?!), my sister Sarah brought us dinner. For dessert, she brought ice cream with homemade hot fudge sauce! She got the recipe on Our Best Bites. It was SO cute too- she had it in a great jar, labeled really nice with a beautiful bow on it. It made the dinner that much more fun to eat because we were looking forward to dessert! So once the kids were in bed, we settled in and enjoyed some hot fudge sundaes. My husband was in HEAVEN!!!

Another recipe that she made recently was the peppermint fudge cupcake jars. Yes, cupcakes in a jar! Isn’t that the cutest idea ever!?¬†First of all, the presentation of these delicious cupcakes is just the best. I had so much fun eating my cupcake on Christmas Eve¬†out of my own little jar! I think these would be SO fun to bring with a meal for someone.

Ok, I have¬†one last idea for you from this wonderful blog.¬†It’s the brown sugar body scrub. I can’t wait to try this, and I’d love to give it out as a¬†gift.¬†So for those of you¬†who know me, if you receive¬†homemade body scrub in a cute little jar with a pretty bow¬†for your next birthday,¬†act surprised okay?
