Happy Monday! I have a wonderful meal idea for you today, and I got it from the wonderful Six Sister’s Stuff. This website is AMAZING!!! Be prepared to have a blast searching through so many amazing recipes, as well as many great project ideas too!

Mom’s Chicken Salad Sandwiches is today’s meal idea, and boy does it look delicious! I just had chicken salad lettuce wraps this weekend, and I had forgotten how yummy chicken salad is.

Remembering Our Heroes and a Meal Idea Monday

It’s a beautiful Monday, and one that I’m thankful for. Today on Memorial Day, we get to honor all of the men and women who have given their lives serving our country in the US Military. And it’s not only those men and women I will be honoring and thinking about today… it’s their families. They have made one of the biggest sacrifices I know of, and they think of and miss them each day. I cannot imagine how hard that must be, and how much they miss their loved ones.

I’d like to even take it one step further. Today our family will be thinking of and honoring those who have given their lives while serving their communities as Firefighters or Police Officers. They are true heroes as well. And to their families and friends, thank you from the bottom of my heart- you are heroes too!! Thank you. So very much. You are loved, appreciated, and cared about by so many.

Today is a day to get together with those you are close with, think of the fallen soldiers and their families, and then be thankful for what God has given you. We all have so much to be thankful for!

Here’s a few recipes that I found on The Food Network for Crunchy Lemonade Drumsticks and Antipasto Salad… could be great to make for dinner to share with your friends tonight!

Also, here’s a video that I wanted to share with you as we honor our fallen heroes…it’s about an incredible woman who’s husband was killed in Afghanistan, and her story. This is what Memorial Day is all about.

Happy Monday! I hope you all had a wonderful weekend. We had a great one- it was filled with a park play date, family dinner at Red Robin, church, and then going to see one of my kid’s (okay and mine too!) favorite people… Bethany Hamilton!

She came to speak at a church near where we live, and it was just awesome. My kids have seen the movie Soul Surfer SO many times, and they are just inspired and encouraged by her story. She was attacked by a shark while surfing, she lost her arm, and she continues to surf! She didn’t let losing her arm stop her from doing what she loves. She now gets to not only keep doing what she loves in surfing, but she gets to talk to people all over the world about her passion for Jesus too, so it’s a win win for her and all who are touched by her story! I love that she is a role model for my 8 year old daughter, and my sons too. So yes, we had a very wonderful weekend!

Today’s recipe comes to you from a good friend of mine who has a great recipe site called Cracked Up Kitchen. It’s for BBQ Chicken Quinoa Salad, and I can’t wait to make this because it looks delicious! It will be a great go-to recipe to bring someone. Enjoy!!

Happy Monday!! I hope you all had a beautiful Easter yesterday. Ours was AMAZING! Easter is my very favorite day to celebrate!!

I found today’s meal idea on the incredible Our Best Bites, and it’s for Southwestern Cobb Salad. The weather is wonderful here in AZ, and eating a delicious cobb salad for dinner while sitting out side on the patio sounds like perfection to me!

Bringing this meal to a friend will be great… just be sure to keep the “wet” ingredients separated, so it doesn’t get soggy. So I’d put the tomatoes in a little disposable container or a baggie, and do the same with the avocados. I’d also bring the dressing in a separate disposable container.

Then once you arrive, ask if you can put it together for them, if they’re okay with that (and leave the dressing to them so they can add as much or as little as they’d like). I’d also be sure the entire salad is in a big disposable tupperware of some kind that you don’t need back. That just makes life so much easier for the person you’re bringing dinner to!

It’s a beautiful Monday here in Arizona, and I have a fantastic meal idea for you! It’s Chicken Mango Lettuce Wraps from Simply Recipes, which is an amazing recipe site. These would be a perfect meal to bring someone this week.

I’m scheduled to bring dinner to a friend I went to school with, and their family is gluten free and dairy free. I think this might be the winner recipe to bring them!

Good morning! I hope you had a great weekend. I have to say, here in Arizona this time of year it is H-O-T. So we spend a lot of time in the water…. swimming pools, the water park, playing outside with the hose, water balloons… anything where water is involved provides relief! What’s the weather like where you are?

I have a delicious summer meal idea for you from a newer favorite site of mine, Family Feedbag: Mediterranean Pasta Salad. It would be delicious and refreshing served cold.

Meal Idea Monday: Spinach Strawberry Salad

Good morning, everyone! I think it’s time for a salad recipe, so here’s a great one from Recipe Zaar… Spinach Strawberry Salad. I don’t know about you, but here in Arizona, it’s really hot right now. I mean, really. hot. So the last thing I want to do is turn on my stove, so I’ve been thinking salad thoughts lately.

I’ve included two sets of directions. The first is if you’re bringing this salad to someone, and the second is if you’re making it to eat at home. The reason is because once the ingredients are tossed together, it should be eaten immediately so it doesn’t get soggy. You can keep the recipe as is (which makes it vegetarian), or add some grilled chicken. Either way, it will be delicious.

Enjoy a nice summer salad this week, and have a great day!

 SALAD INGREDIENTS

  • 1 lb spinach (I pinch off the larger stems)
  • 1 pint strawberries, sliced set a few aside (egg slicer works wonders)
  • 1/2 cup pecans, toasted
  • grilled chicken to add (optional)

DRESSING INGREDIENTS

  • 1/3 cup raspberry red wine vinegar
  • 1/2 cup sugar or 1/2 cup sugar substitute
  • 1 teaspoon dry mustard
  • 3/4 cup vegetable oil
  • 2 teaspoons poppy seeds

IF BRINGING THIS TO SOMEONE, USE THESE DIRECTIONS:

1. Toast pecans over low heat, set aside to cool.

2. Combine dressing ingredients and shake well. You could also use a high speed mixer or magic bullet to emulsify the dressing.

3. Put spinach in a big ziploc bag.

4. Once cooled, place pecans in a ziploc bag.

5. Place grilled chicken (if using) in a disposable conatiner of some kind.

6. Place dressing in a disposable container of some kind.

7. Put all the conainers and bags in a box nicely.

8. Create some kind of nice note with instructions that say something like this: Combine all ingredients, toss, serve immediately and enjoy!

8. For fun, add some colored paper plates, napkins, and forks to your package. This is a great touch. It brings even more joy to the meal, as well as makes even less work for the person you’re bringing it to.

IF EATING AT HOME, USE THESE DIRECTIONS

3. Toss and garnish with a few sliced strawberries.

4. Serve immediately and enjoy!

I just stumbled across an incredible recipe site! It’s called Yummly, and it’s awesome. They have over 500,000 recipes to check out, and you can even search by ingredient, allergy, price, type, and much more. They have a facebook page too- with cool little tips given each day. The Wonderful Waldorf Salad looks yummly! Ha ha, get it- yummly? 🙂 It says to use a red delicious apple, but I think I’d use a honeycrisp apple. Those apples are heaven sent. If you’ve never had a honeycrisp apple, you should go to the grocery store today and get one…
