Happy Monday!! It’s a beautiful day, do you know why? It’s because this is the day the LORD has made! I’ve been working on really trying to see the positive in everything, the beauty in all of life’s moments- even the seemingly mundane parts of life. Let me tell you that when I really look, there is joy to be had in every situation! There is beauty in everything, as long as I’m truly wanting to see it. God is showing me that I have a reason to be thankful in ALL things.
I’m sure many of you are the same way, always looking to see the beauty in everything. But if that’s a struggle for you (like it can be for me), I challenge you to start looking for the beauty and joy. You will certainly find it! And sometimes it’s in the least suspecting places. It’s like a treasure hunt all day long with you and God. It’s fun!

My family and I recently started having Shabbat dinner together as a family on Friday evenings. It’s a beautiful way to welcome the Sabbath, and it’s just great family time for us that we look forward to each week.
I have a dear friend who shared this recipe with me, and it’s so easy to make and it’s absolutely DELICIOUS! I have made it three times now (twice for Shabbat and once just because), and each time my kids just gobble it up. Let me tell you, that is a nice feeling!

BAKED CHICKEN WITH HONEY SOY SAUCE
Recipe adapted from www.chabad.org
4 lb boneless, skinless chicken thighs (I get the package from Costco, and that can make two batches of this or I use the whole package and double the marinade when we have friends over)
1/3 cup honey
3 tbs soy sauce
3 tbs mustard
Directions: Mix honey, soy sauce, and mustard together really well in a bowl. Place chicken thighs spread out in greased baking dish, and then pour sauce all over the chicken.
Bake at 350 degrees for about an hour. Check on it from time to time. Once it’s golden brown, you know it’s ready. If you’re doubling the recipe, it may take a little longer to bake.
The chicken pairs really well with green beans and/or mashed potatoes. I’m all about easy, so I get the already prepared mashed potatoes from Costco, and they’re REALLY good! They’ll think you slaved over the hot stove all day to prepare this wonderful meal!
Well, it’s that time again- how does Monday keep on happening so quickly? Anyone else feel that way? Lately, time seems to be flying.
I, for one, am ready for the summer to be over here in Arizona. We’re almost through August, so that’s a good thing. But really, it’s not until like Halloween that things start to cool down for us. Halloween is my mental marker… if I can make it to the end of October, I’m golden…. and much cooler! Which I know, to many of you that sounds CRAZY since the cool weather and even cold weather comes WAY before the end of October…. 🙂
Seeing that it’s still summer here, I’m thinking grill still. So, here’s a fabulous meal idea that comes from Annie’s Eats. Love that site! It’s for Garlic Lemon Chicken Kabobs. She serves them with tzatziki sauce as well, and boy just looking at them is making my mouth water.
I’m bringing dinner to some good friends of ours whose wife is battling cancer, and these may be the answer to my “what in the world will I bring them?” question that I always have just before I bring a dinner. I know that sounds crazy, but it’s true! I never know what to bring. Yes, I know- if I’m the one doing all these Meal Idea Mondays, it shouldn’t be a problem right?! True, it shouldn’t be a problem. But alas, I still hem and haw until the day before or even the day of about wanting to bring the “perfect” meal.
The truth is… any meal I bring that I make with love is the perfect meal! I’m telling myself this as much as I’m telling anyone who is reading. Grateful to have written this post to be reminded that it’s not about what you bring, it’s that you’re bringing it at all. It’s the love and support that the food shows when you walk up to the door, knock, hand over the food and give them a great big hug. That right there is what this is all about.

Every Sunday, my family has a tradition of getting together for dinner and spending time together. My sister Julie hosted last night, and she made a delicious dinner for us! It was a recipe she found on Pinterest (SUCH a fun site with amazing ideas… I just love browsing pinterest and pinning so many things that I guess if I’m being honest I most likely won’t ever try… but STILL fun to dream and plan! :)). Anyways, it’s for White Chicken Enchiladas from Joyful Momma’s Kitchen.
Verdict? They were AWESOME!!! We ate them with black beans and chips and salsa… it was a meal fit for kings. So this was a pinterest success, and I would recommend anyone bringing these enchiladas over to a friend. Plus they will freeze well, too! Thank you, Julie for the awesome dinner last night!

Hello everyone! Happy Monday! I have a wonderful meal idea for you that would be a beautiful meal to bring someone this week. It’s paleo as well as gluten free (so it’s great for those with food allergies, etc), and super healthy and delicious…. Thai Chicken Lettuce Cups from Paleo Girl’s Kitchen.
This is going to be a new favorite recipe idea site for me, I can tell! I’m ready for my family and I to really start eating healthier… hence the paleo and gluten free meal idea! 🙂
My sister in law is amazingly fit and super healthy, and she is a trainer full time at a cross fit gym in Colorado. She has eaten Paleo for some time now, and swears by it. She says it has helped her feel so much better in so many ways. Now it’s a lifestyle for her, and she enjoys it so much! I have to say I’m intrigued for sure, and am heavily considering trying this out. Clean eating can’t hurt anything… it can only help!
