Meal Idea Monday: Winter Minestrone

I don’t know about you, but it feels like winter to me already. I know it doesn’t “officially” begin until December 21st, but to me- we’re practically there! Oh, and can you even believe that it’s only NINE days until Christmas? What?! Where does the time go?

I have a wonderful soup recipe that will warm your body and soul… Winter Minestrone from The Food Network. It’s from the show, Giada at Home. She’s such a great cook!!

Soups when it’s cold are just what the Dr. ordered, in my opinion. This would be a great meal to bring a friend, so sign up on their Food Tidings schedule and make it for them!

If you know someone who is going through a transitional time in their life, don’t wait for someone else to start- you be the one to create a Food Tidings for them. They’ll be overjoyed at the love and support they receive in the form of meals… and the presence of friends and family who love them at their door!

Hi there! I have a beautiful meal idea for you today that comes from one of my fave recipe sites, Simply Recipes. It’s Roasted Spaghetti Squash Wish Sausage and Kale. What a delicious meal this would be to bring someone this week!

I just absolutely love spaghetti squash. It’s so delicious, and so filling. Plus, bonus: it’s gluten free and if you omit the parmesan cheese, it’s dairy free. Gotta love that! Enjoy!!

Hi there everyone! I want to start off by apologizing for the inconvenience we’ve caused you this past weekend with having our site be so spotty. It was either SUPER slow or timing out for so many of you, and we are so sorry about that. There’s nothing worse than trying to send out a schedule that needs to be filled up, and not being able to get to it. We have used it many times for our own family and friends, and we totally get it. It’s very important that it works quickly and effortlessly without a doubt. Especially since many of the meal schedules you’re creating are for a difficult and important time in people’s lives. Because of this, It is important that our site run fast and be an effective tool in allowing you to help others by bringing them meals. We want to help make things easier for you, not harder!

We appreciate all of you more than you know. Thank you so much for your patience this past weekend. We found the problem, and we’re currently in the process of migrating our hosting with our current host to keep this from happening again. Hopefully I used the correct technical terms but you can never be sure because I’m by no means a tech savvy person (which is why I’m Customer Relations, and not on our IT team!:)) So rest assured, this is being taken care of, and we don’t want this to happen again just as much as you don’t. So thank you again!!

I do have a great meal idea for you this evening, and I hope you like it! It’s from an incredible meal (and much more) site called Six Sisters’ Stuff for Chicken Cordon Bleu Casserole. YUMMY! This reminds me of when I was a kid, and occasionally got to go to Sizzler with my parents. There was something they had called malibu chicken that reminded me of this casserole. Man, it was SO good! So I’m very sure this casserole is delicious, and I can’t wait to try it out!

Hello there! I hope you all had a wonderful Easter, celebrating the most wonderful news of all… Jesus is Alive!! We had a great day spending time with family yesterday, and I came home with a lot of leftover ham. So, I was very excited to see this recipe that Sara from Our Best Bites shared for Smoky Ham and Bean Soup. This will be a great meal to make this week!

Meal Idea Monday: Pan Fried Pork Chops, Smashed Red Potatoes, and Blueberry Cobbler

A few weeks ago, I had my wonderful grandma and grandpa over for dinner. I LOVE my grandparents, and have such fond memories of spending time with them over the years. They were at all of my sports games, we were at their house for all of the major holidays, and they’re just wonderful loving people. They have 6 kids (my mom is one of them), 17 grandkids (I’m one of them of course!), and 13 great grandkids (4 of which are my kids PLUS one on the way from one of my sisters!!). They are just amazing people, they’ve inspired and encouraged me all growing up, and what can I say other than I just love them!

My grandma is a wonderful cook, and she made good and hearty meals for my grandpa all their married lives. As they get older, it is getting a little harder for her to hop into the kitchen and whip up a meal for the two of them. I know this is really frustrating for her, because she’d love to… but our body doesn’t always do what our mind wants us to. You know what I mean? SO, I wanted to make a meal for them that would remind my grandpa of the types of meals my grandma used to make for him.

I went to the Pioneer Woman website (a personal favorite of mine), where I knew I’d find many wonderful meal options. She has a section called Malboro Man Approved, which means it’s a meal her husband really enjoys. He’s a farmer; a real meat and potatoes kind of man. And so is my grandpa, so I figured this would be perfect.

I went with Pan Fried Pork Chops and Smashed Red Potatoes and Blueberry Cobbler (this recipe calls for blackberries, but I substituted blueberries) for dessert. WOW. It all turned out to be so incredibly delicious! I wish I’d made more because everyone would’ve eaten more! But it worked out fine because then I brought out warm blueberry cobbler for dessert fresh from the oven. I have to tell you that even I surprised myself at how yummy it all was! We cleaned out that dish too. I was so happy! I feel the love when the pans are empty and tumies are happily filled… I know some of you know just what I mean!

It was a really special night filled with conversation, laughter, stories, delicious food (of course!), rich relationships, and even topped off with a Justin Bieber concert from my 5 year old son Dane. He’s a huge fan of Justin Bieber, and practices his songs (singing and dancing of course) all the time, and when we have company there is sure to be a concert. 🙂 He is quite the dancer, and quite the little entertainer!

That night, I was so thankful for wonderful family, great food, and for love.

Good morning, everyone! Today is a SUPER exciting day in our home. It’s our oldest daughter Teda’s birthday! She is 7 today, and I can’t believe how fast these last 7 years have gone. She’s precious, and we’re so thankful for her! Today’s recipe of BBQ Sausage and Sweet Potaoes is very fitting because we call our Teda, “Sweet Teda” often! 🙂

The recipe comes from one of my newer favorite sites called Sweet Treats and More. This meal is simple, easy to put together, and absolutely delicious! Enjoy!!

Meal Idea Monday: Potato Ham Bake

It’s a beautiful Monday morning, and I hope everyone had a Merry Christmas! We sure did. I’d say my favorite part of our day was having a Birthday Party for Jesus. It was a really fun way for us all to remember what Christmas is all about. We sang “Happy Birthday”, had a pinata with “Happy Birthday Jesus” bags for the candy, and ate cupcakes. The kids loved it, and so did the adults! It was a wonderful day!

Today’s Meal Idea Monday is from The Better Homes And Gardens site (what a fun site!), and it’s for Potato Ham Bake. It looks delcious, and I plan to make it this week using my left over ham from yesterday. If you have signed up on Food Tidings to bring a meal to someone soon, this would be a great meal to bring them.

Meal Idea Monday: Crockpot Country Ribs with Mashed Potatoes

Crockpot country ribs with mashed potatoes… now if that doesn’t sound good, I don’t know what does!

I just love the website that this meal idea is from, 5 Dollar Dinners. If you haven’t checked it out yet… you just have to! There are endless meal ideas, and the best part- budget friendly. The creator of the site, Erin, has challenged herself to make meals that cost $5 or less. She’s super down to earth, smart, and funny too!

I have to say that when I’m making a meal for my friend or family member, I’m hoping to accomplish 2 things. The first would be that it is a delcious meal they remember. The second is that I am hoping to stay within a certain budget since I still have to feed my own family too.

5 Dollar Dinners accomplishes both those things for us. Delicous, budget friendly recipes. Thank you Erin, for creating such a wonderful resource for us to turn to when bringing meals to those we love!


Ingredients: (next to each ingredient is how much she got each for at the store…)

1.5 lb pork ribs ($1.98) Manager’s Special
1/4 – 1/2 bottle favorite BBQ sauce ($.50)
1 onion ($.40)
3 cloves garlic, crushed ($.03)
8-10 small potatoes (about 2-3 lbs) ($.80)
1/2 – 1 cup milk($. 13) I used rice milk
2-3 Tbsp butter or olive oil ($.20)

Salt/pepper, to taste
2 large broccoli heads ($1) Price matched from Kroger

Total for dinner: $5.04.
