If you ask me, macaroni and cheese is one of the ultimate comfort foods…. and sometimes comfort food just hits the spot. Anyone else with me on that?!

This recipe comes from a favorite recipe site of mine, The¬†Pioneer Woman. Ree Drummond is real, honest, funny, down to earth, and she’s someone I would love to be friends with!

Happy Monday, everyone! It’s a beautiful, cool, rainy day here… which makes me one happy girl! We welcome the rain here in Arizona. ūüôā

Today I have a wonderful guest post for you written by a new friend of mine. Her name is Pauline, and she has a blog called The Copycat Kitchen. I know you will enjoy her meal idea, as well as any others that she brings to our Food Tidings community in the future! ¬†Have a great day, and be someone’s reason to smile today!¬†is an amazing website that my church has been using for years. ¬†I have used it several times to schedule meals for a friend who just had a baby, or another going through an illness. ¬†It blesses me to know that it is blessing them! ¬†I love that¬†¬†makes it so easy to see what is being brought so that everyone doesn’t bring the same meal!

This recipe is called “Chunky Vegetable Lasagna.” ¬†It’s¬†a meal that everyone likes…who doesn’t like¬†vegetables smothered in cheese?! ¬†It uses 3 different cheeses and a pesto garlic-cream sauce. ¬†Whenever possible I made quick work of the prep work by using my Cuisinart food processor to chop/slice the veggies or grate cheese (all different blades). ¬†This was originally posted on¬†my food blog where I like to recreate¬†healthy¬†versions of everyone’s favorite meals and desserts:¬†

12 uncooked whole wheat lasagna noodles
3 cups broccoli, chopped (I used 3 cups zucchini because I didn’t have broccoli)
3 large carrots, coarsely shredded (about 2 cups)
2 cups tomatoes diced, drained (or 14.5 oz can diced tomatoes drained)
1 medium red bell pepper, cut into thin strips
1 medium green bell pepper, cut into thin strips
3/4 cup Pesto (you can buy in store or make your own easily)
1/4 tsp salt (I use unrefined pink Himalayan sea salt)
1 container Ricotta cheese (15 oz)
1/2 cup Parmesan cheese, grated (*I like to grate my own in my food processor or by hand because any time you buy grated cheese it contains toxic preservatives and anti-caking agents‚Äďall not good for you)
1/4 cup chopped fresh parsley (or 1/8 cup dried)
1 large egg (free range, pastured, organic fed is best!)
3 tbsp butter (never margarine! It is 1 molecule away from being plastic!)
1 garlic clove, finely chopped
3 tbsp whole wheat flour
2 cups milk (grass fed is best)
3 cups mozzarella cheese (12 oz), shredded (*see above notes about grating your own cheese)

1) Cook and drain noodles according to directions.
2) Mix broccoli, carrots, tomatoes, bell peppers, Pesto and salt. (large bowl in picture)
3) Mix ricotta cheese, parmesan cheese, parsley, and egg (medium bowl in picture)
4) Melt butter in 2 quart sauce pan over medium heat. Cook garlic in butter about 2 minutes, stirring frequently, until garlic is golden brown. Stir in flour. Cook over medium heat, stirring CONSTANTLY (or it will burn!) until mixture is smooth and bubbly, remove from heat. Stir in milk. Put back on the burner and heat to boiling, again stirring CONSTANTLY (or it will burn!) Boil and stir 1 minute.
5) Heat oven to 350 degrees.
6) Place 3 noodles in ungreased rectangular pan, 13x9x2 inches.
Spread half the cheese mixture over noodles.
Top with 3 noodles, spread with half the veggie mixture
Sprinkle with 1 cup of mozzarella cheese.
Top with 3 noodles; spread remaining cheese mixture.
Top with 3 noodles; spread evenly the remaining veggie mixture.
Pour milk/butter sauce evenly over the top.
Sprinkle with remaining 2 cups of mozzarella cheese.
7) Bake uncovered 35-40 min or until hot in center. Let stand 10 minutes before cutting

Makes 8 (big) servings, 540 calories each

Meal Idea Monday: 4th of July FUN!

Hi all! How’s the weather where you are? It’s been hovering around 115-117 degrees here in sunny Arizona these last few days… whew! Needless to say, we’ve been doing a lot of activities centered around water so that we can stay cool!

On Thursday, to celebrate the 4th of July, my family is heading to a neighborhood BBQ for some great food and lots of water fun. It’ll be so fun, and then once it’s dark we’ll get to watch the fireworks show. We’re looking forward to it!

Some of you are signed up to bring a meal to a friend or family member this week, and I have some great ideas for things you can make. I think making it more festive and cheery is ALWAYS the best way to go. Anything we can do as friends and family to show our love and care, and bring some sunshine into their life is the best option!! ūüôā

Happy Monday, everyone! I have a delightful meal idea for you that would be perfect to bring someone. It’s from one of my favorite recipe sites, Our Best Bites, and it’s for Tortellini Spinach Bake In Creamy Lemon Sauce.

I’m all about the one pot type of dinners I can bring someone. It makes it so much easier on everyone. I’d bring it in a disposable container that you don’t want back. And to top it off and tie it all together, I’d bring a package of brightly colored napkins, plates, and plastic forks. It will bring joy to their dinner table to have both a home cooked meal from you that was made with love and care, as well as bright colors to eat that meal on.

Hi there, everyone!¬†I hope all is well with everyone!¬†We’ve had a great last few weeks. My husband Zach’s mom and sister came into town for a long weekend, and we had a great time with them. We BBQ’d with family, went and saw Hotel Transylvania (cute movie!), went to church together, and just had fun together.

Our third born who is now 4, started T-ball last week. He had his first game on Saturday, and it was AWESOME!¬†What’s more is that he gets to be on the same team as his cousin, which is so fun for them!¬†I always dreamed of when my kids would start trying out sports, and wondered which ones would “stick”. So this is so much fun for us! It’s so cute watching those 3 and 4 year olds learn to play ball too. All the dads are out there with their sons, helping them and teaching them along the way. It was seriously precious!

So that’s some of what we’ve been up to lately. ūüôā

I have a great meal idea for you today from a wonderful new recipe site that I came across. You know how much I love finding fun new resources for us all to have on hand! The recipe is Low Fat Baked Ziti With Spinach¬†(which freezes well also), and it’s from the site Skinny Taste. It’s a site dedicated to a LOT of great, low fat recipes that are tried and true by the author. So this is an amazing find!!

The author of Skinny Taste,¬†Gina, has links to her recipes for: Skinny Pumpkin Recipes, Football Recipes, Skinny Thanksgiving Recipes, and Skinny Holiday Recipes. I don’t know about you, but I like the idea of eating something with the first word of Skinny in the title…¬†ūüėȬ†These recipes will keep you busy in the kitchen for quite some time! ENJOY!!!

Good morning! I hope you had a great weekend. I have to say, here in Arizona this time of year it is H-O-T. So we spend a lot of time in the water…. swimming pools, the water park, playing outside with the hose, water balloons… anything where water is involved provides relief! What’s the weather like where you are?

I have a delicious summer meal idea for you from a newer favorite site of mine, Family Feedbag: Mediterranean Pasta Salad. It would be delicious and refreshing served cold.

Today’s recipe for¬†Beef Stroganoff¬†comes to you from one of our favorite websites, Simply Recipes. It is a gluten free recipe (as long as you serve it over gluten free pasta, potatoes, or rice.) I don’t know about you, but I’m meeting more and more people who are going gluten free. There are many benefits!

We just received word from my husband’s¬†endocrinologist that his bloodwork showed that his hyperthyroid is almost completely back to normal (praise the Lord!), but he does show signs of possible celiac disease. Now he will see a GI¬†Dr. to find out if that’s what’s up.

Sooo, it looks like the next step¬†may be for¬†our family to go gluten free. I’m a little nervous about it, because it seems hard. But that’s because I’ve never done it, and I don’t even know where to begin. But the good news is that with the technology we have, there are a TON of amazing resources online to help on our gluten free adventure!

Meal Idea Monday: Pizza Meatballs

How was everyone’s weekend? Ours was filled with fun things. Our 3rd child, Jett, just turned 4 last week, and we celebrated his birthday on Saturday. We took him and some friends bowling
(so cute!), and then we met back up at my parents’ house for dinner (Cinco de Mayo themed of course!), cake, a pinata (the one thing Jett was most excited about), playing in the water outside, and jumping on the trampoline. It was super laid back, and so much fun! Hard to believe he’s four already. Time goes so fast!

Today’s Meal Idea for Pizza Meatballs¬†comes from a wonderful new resource that I came across while on Pinterest. It’s called Family Feedbag, and it’s packed with great meal ideas for us to check out! The author of Family Feedbag is from Victoria, British Columbia, she’s a wife and mother of 2 little ones,¬†and she loves to share her passion for creating wonderful meals from scratch. I think you’ll really love her blog, and find some amazing meal ideas to bring others as well as make for your family!

Meal Idea Monday… On Tuesday? Creamy Spinach and Avocado Noodles

Hi there! I apologize for not posting this yesterday. My two beautiful sisters and I had an AMAZING weekend away in the beatiful San Diego, CA. We stayed at The Beach Cottages, and it was just so much fun! It was a welcome break from reality, super relaxing, there was lots of laughter, fun shopping for my sister who is expecting a¬†baby girl (YEA!),¬†and at one point I was just so happy to not know or need to know what time it was because I wasn’t in a rush to get anywhere!

My wonderful husband held down the fort with our four munchkins, and did a great job. He took them all to a school function on Friday night, to a birthday party and the gym on Saturday, and then to church on Sunday. He even braved a grocery shopping trip with them! He was so kind, and said that he felt like it was enlightening and necessary so that he can truly appreciate all that I do at home with them.¬†He even said I should do it regularly so that he doesn’t forget this feeling! WOW, I better schedule it now before he forgets that he said that! ūüôā

There’s definitely a LOT that goes in to taking care of children, a home, scheduling, preparing meals, etc!! Can I get an amen, anyone?!!

Well, all that being said, here’s a great vegetarian meal idea for this week. It’s from a new favorite site called Perry’s Plate for Creamy Spinach And Avocado Noodles. I LOVE this idea, and can’t wait to make it!
