Happy Monday!! It’s a beautiful day, do you know why? It’s because this is the day the LORD has made! I’ve been working on really trying to see the positive in everything, the beauty in all of life’s moments- even the seemingly mundane parts of life. Let me tell you that when I really look, there is joy to be had in every situation! There is beauty in everything, as long as I’m truly wanting to see it. God is showing me that I have a reason to be thankful in ALL things.

I’m sure many of you are the same way, always looking to see the beauty in everything. But if that’s a struggle for you (like it can be for me), I challenge you to start looking for the beauty and joy. You will certainly find it! And sometimes it’s in the least suspecting places. It’s like a treasure hunt all day long with you and God. It’s fun!

I have a wonderful recipe idea for you today, from a wonderful recipe site- Family Feedbag. The recipe is for Salsa Chicken and Rice Casserole. If you ask me, macaroni and cheese is one of the ultimate comfort foods…. and sometimes comfort food just hits the spot. Anyone else with me on that?!

This recipe comes from a favorite recipe site of mine, The¬†Pioneer Woman. Ree Drummond is real, honest, funny, down to earth, and she’s someone I would love to be friends with!

Anyways, here’s the link to the recipe, and I hope you will make this for a friend and bring it to them this week. And if you have someone in your life who could use some sunshine, love and support in the form of meals, set up a Food Tidings for them! I know they would be SO thankful!!

Happy Monday, everyone! It’s a beautiful, cool, rainy day here… which makes me one happy girl! We welcome the rain here in Arizona. ūüôā

Today I have a wonderful guest post for you written by a new friend of mine. Her name is Pauline, and she has a blog called The Copycat Kitchen. I know you will enjoy her meal idea, as well as any others that she brings to our Food Tidings community in the future! ¬†Have a great day, and be someone’s reason to smile today!¬†is an amazing website that my church has been using for years. ¬†I have used it several times to schedule meals for a friend who just had a baby, or another going through an illness. ¬†It blesses me to know that it is blessing them! ¬†I love that¬†¬†makes it so easy to see what is being brought so that everyone doesn’t bring the same meal!

This recipe is called “Chunky Vegetable Lasagna.” ¬†It’s¬†a meal that everyone likes…who doesn’t like¬†vegetables smothered in cheese?! ¬†It uses 3 different cheeses and a pesto garlic-cream sauce. ¬†Whenever possible I made quick work of the prep work by using my Cuisinart food processor to chop/slice the veggies or grate cheese (all different blades). ¬†This was originally posted on¬†my food blog where I like to recreate¬†healthy¬†versions of everyone’s favorite meals and desserts:¬†

12 uncooked whole wheat lasagna noodles
3 cups broccoli, chopped (I used 3 cups zucchini because I didn’t have broccoli)
3 large carrots, coarsely shredded (about 2 cups)
2 cups tomatoes diced, drained (or 14.5 oz can diced tomatoes drained)
1 medium red bell pepper, cut into thin strips
1 medium green bell pepper, cut into thin strips
3/4 cup Pesto (you can buy in store or make your own easily)
1/4 tsp salt (I use unrefined pink Himalayan sea salt)
1 container Ricotta cheese (15 oz)
1/2 cup Parmesan cheese, grated (*I like to grate my own in my food processor or by hand because any time you buy grated cheese it contains toxic preservatives and anti-caking agents‚Äďall not good for you)
1/4 cup chopped fresh parsley (or 1/8 cup dried)
1 large egg (free range, pastured, organic fed is best!)
3 tbsp butter (never margarine! It is 1 molecule away from being plastic!)
1 garlic clove, finely chopped
3 tbsp whole wheat flour
2 cups milk (grass fed is best)
3 cups mozzarella cheese (12 oz), shredded (*see above notes about grating your own cheese)

1) Cook and drain noodles according to directions.
2) Mix broccoli, carrots, tomatoes, bell peppers, Pesto and salt. (large bowl in picture)
3) Mix ricotta cheese, parmesan cheese, parsley, and egg (medium bowl in picture)
4) Melt butter in 2 quart sauce pan over medium heat. Cook garlic in butter about 2 minutes, stirring frequently, until garlic is golden brown. Stir in flour. Cook over medium heat, stirring CONSTANTLY (or it will burn!) until mixture is smooth and bubbly, remove from heat. Stir in milk. Put back on the burner and heat to boiling, again stirring CONSTANTLY (or it will burn!) Boil and stir 1 minute.
5) Heat oven to 350 degrees.
6) Place 3 noodles in ungreased rectangular pan, 13x9x2 inches.
Spread half the cheese mixture over noodles.
Top with 3 noodles, spread with half the veggie mixture
Sprinkle with 1 cup of mozzarella cheese.
Top with 3 noodles; spread remaining cheese mixture.
Top with 3 noodles; spread evenly the remaining veggie mixture.
Pour milk/butter sauce evenly over the top.
Sprinkle with remaining 2 cups of mozzarella cheese.
7) Bake uncovered 35-40 min or until hot in center. Let stand 10 minutes before cutting

Makes 8 (big) servings, 540 calories each

Good morning, friends! Does your family ever eat breakfast for dinner? Mine totally does! There’s something that is refreshing to me about eating breakfast for dinner, and it’s just a nice change of pace for us.

So in light of that, I thought I’d share two breakfast recipes with you. They come from one of my favorite recipe sites, Simply Recipes. They are Sausage Breakfast Casserole and Zucchini Breakfast Casserole.

With St. Patrick’s Day coming up, I thought it would be fun to share some great recipe ideas with you. I found some great ones onFood Network, and my favorite looks to be Melissa’s Shepherd’s Pie.

It’s true that I may be a little partial since my last name is Shepherd…. but also all the ingredients in there are just delicious! This could be a spectacular meal to bring someone this week as we near St Patrick’s Day.

Don’t forget to wear green on Sunday, so you don’t get pinched! ūüėČ

Oh, and here are a few really cute printables you can bring with your meal to spruce things up and add a little color! GREEN color, that is!

Hi there everyone! I want to start off by apologizing for the inconvenience we’ve caused you this past weekend with having our site be so spotty. It was either SUPER slow or timing out for so many of you, and we are so sorry about that. There’s nothing worse than trying to send out a schedule that needs to be filled up, and not being able to get to it. We have used it many times for our own family and friends, and we totally get it. It’s very important that it works quickly and effortlessly without a doubt. Especially since many of the meal schedules you’re creating are for a difficult and important time in people’s lives. Because of this, It is important that our site run fast and be an effective tool in allowing you to help others by bringing them meals. We want to help make things easier for you, not harder!

We appreciate all of you more than you know. Thank you so much for your patience this past weekend. We found the problem, and we’re currently in the process of migrating our hosting with our current host to keep this from happening again. Hopefully I used the correct technical terms but you can never be sure because I’m by no means a tech savvy person (which is why I’m Customer Relations, and not on our IT team!:)) So rest assured, this is being taken care of, and we don’t want this to happen again just as much as you don’t. So thank you again!!

I do have a great meal idea for you this evening, and I hope you like it! It’s from an incredible meal (and much more) site called Six Sisters’ Stuff for Chicken Cordon Bleu Casserole. YUMMY! This reminds me of when I was a kid, and occasionally got to go to Sizzler with my parents. There was something they had called malibu chicken that reminded me of this casserole. Man, it was SO good! So I’m very sure this casserole is delicious, and I can’t wait to try it out!

Hi there, everyone!¬†I hope all is well with everyone!¬†We’ve had a great last few weeks. My husband Zach’s mom and sister came into town for a long weekend, and we had a great time with them. We BBQ’d with family, went and saw Hotel Transylvania (cute movie!), went to church together, and just had fun together.

Our third born who is now 4, started T-ball last week. He had his first game on Saturday, and it was AWESOME!¬†What’s more is that he gets to be on the same team as his cousin, which is so fun for them!¬†I always dreamed of when my kids would start trying out sports, and wondered which ones would “stick”. So this is so much fun for us! It’s so cute watching those 3 and 4 year olds learn to play ball too. All the dads are out there with their sons, helping them and teaching them along the way. It was seriously precious!

So that’s some of what we’ve been up to lately. ūüôā

I have a great meal idea for you today from a wonderful new recipe site that I came across. You know how much I love finding fun new resources for us all to have on hand! The recipe is Low Fat Baked Ziti With Spinach¬†(which freezes well also), and it’s from the site Skinny Taste. It’s a site dedicated to a LOT of great, low fat recipes that are tried and true by the author. So this is an amazing find!!

The author of Skinny Taste,¬†Gina, has links to her recipes for: Skinny Pumpkin Recipes, Football Recipes, Skinny Thanksgiving Recipes, and Skinny Holiday Recipes. I don’t know about you, but I like the idea of eating something with the first word of Skinny in the title…¬†ūüėȬ†These recipes will keep you busy in the kitchen for quite some time! ENJOY!!!

Hello there, everyone! It’s a beautiful Monday!!

I have to share with you that week one of our homeschooling adventure went AWESOME! Our kids are loving it, and I am too! I truly can already see a difference in my kids… the way they have been treating one another, eager to learn new things,¬†and so incredibly loving towards me, their teacher! They were great kids before, but I just think for our family (and it’s different for every family), this is a great fit right now.I can’t wait to get a few pictures up here of what we’ve been up to as well.

Hi there!! I hope everyone is having a great summer so far. Ours has been fun… we’ve been having lots of family time at the water park on the weekends, swimming in a few different pools, Vacation Bible School for my older three kids, movie nights, and playdates. Summer has been¬†awesome so far!
