Happy Monday!! It’s a beautiful day, do you know why? It’s because this is the day the LORD has made! I’ve been working on really trying to see the positive in everything, the beauty in all of life’s moments- even the seemingly mundane parts of life. Let me tell you that when I really look, there is joy to be had in every situation! There is beauty in everything, as long as I’m truly wanting to see it. God is showing me that I have a reason to be thankful in ALL things.
I’m sure many of you are the same way, always looking to see the beauty in everything. But if that’s a struggle for you (like it can be for me), I challenge you to start looking for the beauty and joy. You will certainly find it! And sometimes it’s in the least suspecting places. It’s like a treasure hunt all day long with you and God. It’s fun!

I don’t know about you, but it feels like winter to me already. I know it doesn’t “officially” begin until December 21st, but to me- we’re practically there! Oh, and can you even believe that it’s only NINE days until Christmas? What?! Where does the time go?
I have a wonderful soup recipe that will warm your body and soul… Winter Minestrone from The Food Network. It’s from the show, Giada at Home. She’s such a great cook!!
Soups when it’s cold are just what the Dr. ordered, in my opinion. This would be a great meal to bring a friend, so sign up on their Food Tidings schedule and make it for them!

Happy Monday, everyone!! I hope you all had a great weekend. My family and I certainly have because we’ve been in Colorado visiting friends and family. Let me just say, Colorado is BEAUTIFUL!! I’m reminded of it each time we visit. There is fun, family, such beautiful scenery, it’s chilly, and just awesome. Oh, and there are Denver Bronco fans everywhere which makes my hubby a very happy man.
I’ve been thinking a lot about soups this weekend because of how chilly it has been, so I found a beautiful soup recipe from one of my fave recipe sites, Six Sisters Stuff. It’s for Stuffed Pepper Soup and Cheesy Garlic Flat Bread. How yummy does that sound? Makes me wanna get in my cozy sweats, and curl up on the couch with a bowl of this soup along with my favorite TV show (Master Chef happens to be my favorite right now).
So, be sure to make a double batch of this soup so that you can bring some to a friend that you’ve signed up on a Food Tiding for, as well as keep some for you beautiful family too! Both parties are sure to enjoy it. 🙂
Hi there! I have a beautiful meal idea for you today that comes from one of my fave recipe sites, Simply Recipes. It’s Roasted Spaghetti Squash Wish Sausage and Kale. What a delicious meal this would be to bring someone this week!
I just absolutely love spaghetti squash. It’s so delicious, and so filling. Plus, bonus: it’s gluten free and if you omit the parmesan cheese, it’s dairy free. Gotta love that! Enjoy!!

Let me just start by saying this. My kids LOVE these muffins! I found this recipe for Pumpkin Chocolate Chip Muffins on my friend Katie’s blog, Intentionally Katie. Great blog, great recipe! I double it, so that we have extra to bring to friends.
These are a BEAUTIFUL addition to the meal that you plan to bring a friend this week. Or bring over a batch to your neighbor. It will strike up conversation, and be a great way to build community within your neighborhood.
These muffins also make me so happy because they mean it’s FALL and it’s getting COOLER!!! Here in AZ, we’re all giddy after Halloween because it means things are cooling down. YEA!

PUMPKIN CHOCOLATE CHIP MUFFINS
1 c. flour
1 c. sugar
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ground cinnamon
2 eggs, beaten
1 c. ground pumpkin (canned)
1/2 c. cooking oil
1/3 c. chocolate chips
Mix together. Fill muffin cups and bake at 350 for 20-25 minutes. Yields 24 muffins.
(I posted this recipe quite a while ago, and they’re such a huge hit that I just had to post it again.. .they are my kids go to recipe whenever we talk about baking!)
My family and I recently started having Shabbat dinner together as a family on Friday evenings. It’s a beautiful way to welcome the Sabbath, and it’s just great family time for us that we look forward to each week.
I have a dear friend who shared this recipe with me, and it’s so easy to make and it’s absolutely DELICIOUS! I have made it three times now (twice for Shabbat and once just because), and each time my kids just gobble it up. Let me tell you, that is a nice feeling!

BAKED CHICKEN WITH HONEY SOY SAUCE
Recipe adapted from www.chabad.org
4 lb boneless, skinless chicken thighs (I get the package from Costco, and that can make two batches of this or I use the whole package and double the marinade when we have friends over)
1/3 cup honey
3 tbs soy sauce
3 tbs mustard
Directions: Mix honey, soy sauce, and mustard together really well in a bowl. Place chicken thighs spread out in greased baking dish, and then pour sauce all over the chicken.
Bake at 350 degrees for about an hour. Check on it from time to time. Once it’s golden brown, you know it’s ready. If you’re doubling the recipe, it may take a little longer to bake.
The chicken pairs really well with green beans and/or mashed potatoes. I’m all about easy, so I get the already prepared mashed potatoes from Costco, and they’re REALLY good! They’ll think you slaved over the hot stove all day to prepare this wonderful meal!
