Yesterday for dinner, I put together a little something that turned out to be really delicious. The great part is that it literally cost me about $4 to make, and it fed the 5 eaters I have in my family! If I had to do anything different next time, I’d make a double batch so we had leftovers for lunches the next day.
Turkey Kielbasa Stir Fry
(serves 2 adults and 3 small children comfortably)
1 orange bell pepper, sliced in long pieces
1 green bell pepper, sliced in long pieces
1 yellow onion, sliced in long pieces
1 turkey kielbasa, cut up however you prefer
1 cup jasmine rice
1 tbs olive oil
optional: a pat of butter and a few shakes of garlic salt
Place 1 cup jasmine rice and 2 cups water in a microwave safe bowl- microwave for 13 minutes. Once done, add a little butter and some garlic salt to taste- that just makes it taste that much better!
Cut up veggies, cut turkey kielbasa, put olive oil in frying pan and get it hot and ready for veggies. Once pan is ready, add all veggies, and stir fry them- it’s best when the onions begin to turn brown and the peppers start to get soft. Then add the kielbasa, and warm it. It’s best when the kielbasa gets a bit browned.
To serve, place rice on plate, and add kielbasa stir fry mixture on top. Enjoy this delicious, healthy, and inexpensive meal!
