Meal Idea Monday- Green Tortilla Chili

Hello 2011, and hello to all our food tidings friends! I hope everyone had a wonderful Christmas and a fun New Years. We sure did- lots of family time, movie nights, hanging out, catching up on a few home improvement projects, time with friends… it was a wonderful Christmas break. But now it’s time to get back into the groove, and we’re ready.

Today I wanted to share with you a recipe for Green Tortilla Chili that I got from a very good friend of mine, Nicole. She’s always making new recipes, and she shared this one with me a while back. We used to live on the same street, and would get together once a week for a playdate. Then after a while, we decided that we’d get together just us one evening a week. She used to have all kinds of fun things she baked or cooked when we came over. Whatever she was craving (especially when she’s pregnant!) she’d make. Now we’ve moved about 15 min away, and we don’t see each other nearly as often as we did when we were neighbors, which is such a bummer. 

Just as a little side note, she’s about to have her fourth baby in about a week and a half. Her and her husband have three girls, and this one is a girl too! And you know what that means… they’ll be getting some delicious meals from her friends and family once that sweet baby girl is born. 🙂

Green Tortilla Chili

1 rotisserie chicken or 1 to 1 1/2 lb turkeymeat

3T olive oil

1 onion

2 cloves garlic

1 jalepeno

1 T chili powder

2t cumin

1 16 oz can tomatillo salsa

1 beer

1 quart chicken stock

4 handfuls of tortilla chips

2 limes

Directions:

-Cook onions, garlic, and jalepeno in oil- about 4 min.

-Add chili powder, cumin, salsa, beer, and stock.

-Bring to a bubble, add ckicken (if you use turkey meat, make sure it’s browned and cooked up before you add it), and simmer for 10 min.

-Grind (in food processor or blender) 2 handfuls chips, add to mixture, cook 8-10 minutes.

-Squeeze lime juice out of both limes just before serving.

-Eat with chips crumbled on top of soup. ENJOY!
