Today’s recipe for Beef Stroganoff comes to you from one of our favorite websites, Simply Recipes. It is a gluten free recipe (as long as you serve it over gluten free pasta, potatoes, or rice.) I don’t know about you, but I’m meeting more and more people who are going gluten free. There are many benefits!

We just received word from my husband’s endocrinologist that his bloodwork showed that his hyperthyroid is almost completely back to normal (praise the Lord!), but he does show signs of possible celiac disease. Now he will see a GI Dr. to find out if that’s what’s up.

Sooo, it looks like the next step may be for our family to go gluten free. I’m a little nervous about it, because it seems hard. But that’s because I’ve never done it, and I don’t even know where to begin. But the good news is that with the technology we have, there are a TON of amazing resources online to help on our gluten free adventure!

Meal Idea Monday: Pizza Meatballs

How was everyone’s weekend? Ours was filled with fun things. Our 3rd child, Jett, just turned 4 last week, and we celebrated his birthday on Saturday. We took him and some friends bowling
(so cute!), and then we met back up at my parents’ house for dinner (Cinco de Mayo themed of course!), cake, a pinata (the one thing Jett was most excited about), playing in the water outside, and jumping on the trampoline. It was super laid back, and so much fun! Hard to believe he’s four already. Time goes so fast!

Today’s Meal Idea for Pizza Meatballs comes from a wonderful new resource that I came across while on Pinterest. It’s called Family Feedbag, and it’s packed with great meal ideas for us to check out! The author of Family Feedbag is from Victoria, British Columbia, she’s a wife and mother of 2 little ones, and she loves to share her passion for creating wonderful meals from scratch. Experiencing Loss

About eight years ago, I had a miscarriage. I was 9 1/2 weeks along, and I just knew something was not right before I even had symptoms that confirmed that. I was so scared, and my husband was at work, so my mom went with me to have an ultrasound to see if everything was okay.

There I lay on the cold table at the Dr’s office, watching the screen of the ultrasound maching and wondering what I would even be looking for if everything was okay. I felt very vulnearable, scared, and a sense of loss. The ultrasound tech confirmed that there was no longer a heartbeat, and also said that it looked like it was twins. Woah. I was excited at the idea that we could’ve had twins, and sad that it wasn’t going to happen all at the same time.

The rest of the day is a blur in my memory. My Dr. explained that 1 in 4 pregnancies end this way, and that it’s the body’s way of helping when something was probably very wrong with the baby or babies. He was kind, and said that it was nothing that I did or didn’t do, and that it just happens. He suggested that I have a D&C to help my body with the process that had already begun to occur. So that’s what we did.

I remember laying in the recovery area, and telling the nurse that it was twins. I was so incredibly sad, and I wondered if I’d ever be able to have a baby. The fear and sadness I felt was pretty overwhelming. I had amazing support in my family and friends, but it was a very difficult time.

It took us a year to get pregnant again, and each month leading up to getting pregnant, I would cry when I’d realize that that wasn’t the month. I didn’t want to worry or be fearful. I knew logically that God is the one who decides when the right timing of things is and I wanted to trust Him, but I struggled for sure. A book that helped me a ton during that time, and even once I got pregnant with my first (because I had to be on bedrest from experiencing spotting for the first trimester) was

Now I’m grateful and humbled to say that God has blessed us with four beautiful children since then. Sometimes I think about how things might have been if we were able to have the twins, and how different life would be. But then I realize that if that had happened, we probably wouldn’t have the four amazing kids that we are so blessed to have now.

But I know that everyone’s story is different. Some women carry their babies to full term and deliver them stillborn. Some deliver their sweet baby, and he or she only lives for a very short time, never able to leave the hospital. Some women are not able to get pregnant at all, and go through the grief of not being able to birth a child of their own. These are stories, experiences, and emotions that I know many women have, and also stories that aren’t told very often. They are memories that are held onto in the hearts of so many.

When it happens to someone you know, what do you do? What do you say? How do you help and show your love? I know those are the questions I have had when it’s happened to a few friends of mine.

Here is a beautiful article from a wonderful woman that I had the pleasure of hearing speak at a blogging conference last year. She recently experienced the loss of her precious daughter, Afton Jean. She wrote about five things you can say or do for a friend who has experienced a loss. I’m so grateful for this article and for the heart of Kami, that she wants to help others as they grieve their way through these difficult times. She’s a tremendous writer and a very talented photographer.

My biggest take away from her article was that saying “let me know if you need anything” is one of the worst things you could say. She uses a quote from Ronald A. Rasband to explain why that’s not helpful, and I think she’s exactly right. Here’s the quote: “”If you came upon a person who was drowning, would you ask if he needs help, or would it be better to just jump in and save him from the deepening waters. The offer whilst well-meaning and often given: ‘let me know if I can help?’ is really no help at all.” – Ronald A. Rasband”

So, here’s where Food Tidings comes in. If you know someone who has experienced a loss of some kind, make them a meal schedule. Get your friends and family together, and invite them to sign up and bring a meal. It’s a tangible way to share your love and care with them. Then you can incorporate a few of Kami’s suggestions when you bring the meal. I think that by just bringing the meal, and being there will mean so much.

Happy National Pretzel Day!

It’s National Pretzel Day, and I’m excited about that! The funny thing is that I went to the store today with my kiddos before I realized what today is, and we got pretzels and chocolate to make chocolate dipped pretzels! Our family LOVES them, so they are gone pretty much the day we make them. :)

Meal Idea Monday: Shredded Beef Soft Tacos

Good morning!!! It’s a beautiful day, and I have a great meal idea for you from For The Love of Cooking (LOVE this recipe site!) It’s Shredded Beef Soft Tacos, and this would be a simple, delicious, and easy to transport meal to bring someone this week. You can just bring the meat, tortillas, and all the fixings in separate baggies or disposable containers. I would bring some fun colored plates and napkins too, just to brighten their day even more. :)

I have a dear friend who is dealing with a lot of health issues with her and her sweet family, and this just might be the meal I bring her this week. Of course, I will make a double batch so I can feed my family as well! Have a great day!!!

Meal Idea Monday… On Tuesday? Creamy Spinach and Avocado Noodles

Hi there! I apologize for not posting this yesterday. My two beautiful sisters and I had an AMAZING weekend away in the beatiful San Diego, CA. We stayed at The Beach Cottages, and it was just so much fun! It was a welcome break from reality, super relaxing, there was lots of laughter, fun shopping for my sister who is expecting a baby girl (YEA!), and at one point I was just so happy to not know or need to know what time it was because I wasn’t in a rush to get anywhere!

My wonderful husband held down the fort with our four munchkins, and did a great job. He took them all to a school function on Friday night, to a birthday party and the gym on Saturday, and then to church on Sunday. He even braved a grocery shopping trip with them! He was so kind, and said that he felt like it was enlightening and necessary so that he can truly appreciate all that I do at home with them. He even said I should do it regularly so that he doesn’t forget this feeling! WOW, I better schedule it now before he forgets that he said that! :)

There’s definitely a LOT that goes in to taking care of children, a home, scheduling, preparing meals, etc!! Can I get an amen, anyone?!!

Well, all that being said, here’s a great vegetarian meal idea for this week. It’s from a new favorite site called Perry’s Plate for Creamy Spinach And Avocado Noodles. I LOVE this idea, and can’t wait to make it!

Meal Idea Monday Guest Post: Chicken Quarters Roasted With Lemons and Green Olives

Hello! I’m Andrea, a stay-at-home mom and food blogger for Inspired2Cook. I love cooking, entertaining, and motivating others to get in their kitchens! Recently, I posted this delicious recipe for Chicken Quarters Roasted with Lemons and Green Olives. It’s easy to make and a great reason to throw a Spring dinner party! The dish can be made ahead and reheated, making it perfect for entertaining.

I found some really good pitted green olives at my store’s olive bar. Sample a few different types (if your store lets you do that); you’ll need 1 cup of whole olives. I think pitted work best in this recipe so that nobody breaks a tooth biting into an olive pit. If you can’t find pitted olives, however, warn your guests about the pits. Also, buy olives that haven’t been marinated (you don’t want flavors competing in the dish).

Serve the chicken with buttered orzo (rice-shaped pasta) and a mixed green salad. For dessert, serve Sour Cream and Lemon Pound Cake  with fresh berries.

Chicken Quarters Roasted With Lemons and Green Olives

Many cooks overlook dark-fleshed thighs and legs in favor of their white-meat counterparts, breasts and wings. The truth is that thighs and legs are both moist and flavorful and can easily take center stage. In the following dish, chicken quarters (both legs and thighs) are roasted slowly in an aromatic mix of green olives, lemon, and white wine until they are golden brown, juicy, and tender. For serving, the chicken is showered with crumbled feta. Serves 6.

3 large, thick-skinned lemons 6 chicken leg-and-thigh quarters with skin on, about 3 1/2 pounds Kosher salt Freshly ground black pepper 3 to 4 tablespoons olive oil 3/4 cup chopped shallots (2 to 3 large shallots) 6 tablespoons flat-leaf parsley 4 teaspoons minced garlic 2 teaspoons dried oregano 1 1/4 cups dry white wine 1 cup green Mediterranean olives, pitted or unpitted 3/4 to 1 cup chicken broth 1/2 cup crumbled feta cheese

Arrange a rack in the center position and preheat the oven to 375°F degrees.

Zest 2 of the lemons to yield 2 tablespoons, and juice to yield 1/4 cup juice. Cut the third lemon into 6 wedges for the garnish.

Pat the chicken quarters dry with paper towels. Trim and discard any excess fat. Salt and pepper the chicken generously on both sides. Place an extra-large ovenproof frying pan (with a lid) over medium- high heat with enough oil to coat the bottom (3 to 4 tablespoons). When the oil is very hot but not smoking, add the chicken pieces in a single layer. Brown well on all sides, turning several times, for about 12 to 15 minutes. Remove the pan from the heat and transfer the chicken to a side dish. Reserve 4 tablespoons of the oil in the frying pan and discard the rest (or add more oil to make 4 tablespoons if necessary).

Return the pan to the stove over low heat. Add the shallots and cook, stirring, until just softened but not browned, for 1 to 2 minutes. Add half the parsley, the garlic and the oregano and cook for 1 minute. Stir in the lemon zest and juice, wine and olives, then return the chicken to the pan.

Bring the mixture to a simmer, then cover the frying pan and place it in the oven. Roast until the chicken is very tender when pierced with a knife, 45-50 minutes, then remove the lid and roast for 5 to 10 minutes longer to let the juices reduce slightly. Watch carefully so that the juices do not evaporate completely.

Remove the chicken to a platter, tent loosely with foil and set aside. Add 3/4 cup broth to the pan and heat until it is warm. The mixture should have a very thin, sauce-like consistency. If too thick, add an additional 1/4 cup broth. (The chicken can be prepared 1 day ahead; cool, cover, and refrigerate. Reheat, covered, in a 350°F oven until hot, 15 minutes or longer, adding extra broth if needed.)

To serve, pour the juices over the chicken. Sprinkle with feta cheese and the remaining parsley, and garnish with the lemon wedges.

Market Notes: If you can’t find whole chicken legs (that is, the drumstick and thigh attached together), you can use six thighs and six drumsticks.

Picholine or Lucques olives are good green French olives that work well in this recipe.

Cooking Tip: If you do not have an extra-large frying pan, you can use a flameproof roasting pan/tray covered with a double thickness of foil.
